Yesterday I made apple crisp. I was going to take pictures but then I ate it too fast. All I got was this one when bragging on Instagram, and that was before the vanilla ice cream. Yum!
So here's the recipe:
Ingredients:
4 cups sliced apples
2/3 cup packed brown sugar
1/2 cup flour
1/2 cup rolled oats
1/3 cup butter or margarine cut into pieces
3/4 teaspoon nutmeg
3/4 teaspoon cinnamon
dash of ginger
Directions:
Preheat oven to 350*
Spray an 8x8 pan with nonstick cooking spray.
Slice apples and add to prepared pan.
Mix brown sugar, flour, oats, and spices in medium bowl.
Add butter and mix with fork (or clean hands) until crumbly.
Pour over apples, covering evenly.
Bake for 30 minutes or until top is golden brown and apples are soft (no resistance when poked with knife).
Serve warm with vanilla ice cream and ENJOY!

#12
I forgot to take any pictures during the process but I made a cake from scratch last week for my mom's birthday. I found this orange chocolate chunk cake recipe from Annie's Eats and it was great. I was really proud of how it turned out.
I made a few changes to the recipe. I used semisweet chocolate chips for the chocolate, didn't add the glaze, and made a different chocolate topping. Oh, and I made it all in one big bundt pan instead of minis.
Happy birthday mom!

#12 preview
My mom's birthday is next Friday and I've decided to make her a cake. Since I've never made a cake from scratch, only from a box, I am going to do just that. And, I'll knock out my #12 on 30b430 also.
My mom always asks for an orange cake with chocolate frosting but since I could never find a box mix of orange cake I will have to do it from scratch. I'm going to try this recipe from Annie's Eats. Her food always seems amazing but I've never made any of her recipes because she does all her baking from scratch and I'm intimidated... but no time like the present and my mom needs a birthday cake!

smells like fall...
Today feels like spring time but in my kitchen, it smells like fall. I made pumpkin cupcakes with pumpkin spiced cream cheese frosting... yum. :) and super easy. I still need to figure out how to evenly divide my batter into my cupcake tins because my cupcake/muffins are always random sizes. I can't seem to get them to be consistent.
I used this recipe from Gina at Skinnytaste.
plus my very poor attempt at frosting... lol
I want to make Pina Colada cupcakes for Easter so I figured I better practice with one of her other recipes first. Good choice. I think I'll have one for breakfast tomorrow too.
